Marinating the Chicken:
1Add Rose water and Saffron in a blender, then blend it for 5 secs.
2Add garlic, ginger, lemon juice, tomato paste, cardamom powder, turmeric powder, Spicy seasoning, salt & pepper in a blender, continue blending until it gets thick then set aside.
3Rub the sauce inside and outside the chicken.
Stuffing the chicken:
1Heat a pan with oil, add potato (small cubes) and fry until gets golden brown in color then set aside.
2Heat a pan with oil, add onion and continue stirring until it gets pink. Then in the same pan add garlic, hummus chick peas, raisin, laurel leaves, boiled egg, fried potato, turmeric powder, cardamom powder, spicy seasoning, salt & pepper then continue stirring for 3minutes.
3Put the half of stuffing ingredients inside the chicken then the other half wrapped it in aluminum foil.
Cooking the chicken:
1Prepare a steamer with 2L of water.
2Place the whole chicken and the half of stuffing in the steamer then cover it with the aluminum foil.
3Cook the chicken for 1hour.
Cooking the rice:
1Add 4 cups of water in a pot and let it boil.
2Add 2 cups of Basmati rice in a pan and let it cook for 7 to 10minutes.
3When the rice is cooked, get a strainer and remove the excess water.
4Place the rice on a big plate
1Mix the rose water and saffron in a small bowl. Spread evenly on top of the rice.
2Place the chicken on top of the rice.
3Spread evenly the stuffing ingredients on top of the rice or as you like where to place it.
4Put pistachios and pomegranate on top of the rice evenly
5Then serve. Have a nice meal.
