Strawberry Basbousa with Qeshta filling

Ingredients for basbousa:

2 cups semolina flour

2 cups shredded coconut

1 tsp baking powder

¼ cup milk

1 cup sugar

2 cups Fresh cream

6 pcs eggs

1 tsp vanilla extract

2 cups vegetable oil

4 tbsp. Butter

Ingredients for Qeshta:

2 cups milk

4 tbsp. cornstarch

4 tbsp. sugar

½ cup table cream

Ingredients for Strawberry syrup:

1 pack Al Islami Frozen Strawberry

1 cup water

1 cup white sugar


1Heat the oven to 180C. grease a square baking dish using the butter.

2In a large bowl, mix together the semolina flour, baking powder, coconut, sugar, milk, fresh cream, eggs, vanilla and vegetable oil. Mix until moistened but not runny or liquid. Spread the half of the mixture into a greased square baking dish, set aside the other half of the mixture.

3Bake for 10 to 12 minutes in the pre-heated oven until edges turn golden brown. While the half of the basboosa is baking, heat a saucepan over high heat and start making qeshta. add milk, sugar, cornstarch. Stir constantly, bring to boil for 2 minutes until it gets thick. Add the cream and stir well. Immediately pour the hot qeshta over hot baked basbousa, and spread evenly.

4Add the other half of basbousa on top of the qeshta and spread evenly.

5Bake for 45 minutes in the pre-heated oven, until golden brown. While basboosa is baking, prepare a sauce pan over medium heat, put the Al Islami frozen strawberry, water, and sugar; stir until sugar is dissolved, Boil for 5 minutes. Reduce heat to a medium low and simmer until sauce is thick, about 5 minutes.

6When the basboosa has finished baking, let it rest for 20 minutes before cutting. Put the strawberry syrup/puree on top of basboosa then serve.
